Buster and I are on a very limited budget as usual this year.  Which suits us just fine, because we love to make and give home made gifts to our loved ones. It’s one of my favorite things to do! It’s exhausting, but I love it!

Here are a few of the things I made this last week for Saturday’s family Christmas…

Dipped Pretzels Nom Nom Nom…

Never mind the Jo-Lyn’s stamp on the picture…that’s my other blog for my cup cake/candy biz.

These are a couple of the Chocolate Spoons ‘The Girl’ and I made.  Don’t they look yummy? :)

MMMMM…yummy Candy Cane Marshmallows :)

Buster wasn’t feeling well when we went to the store to pick up the things I needed to make the goodies so he sat in the car while ‘The Girl’ and I shopped.  Because we were in a hurry I completely forgot to buy something to put the goodies in once they were made.  I bought these cute paper doilies to make tags with but nothing to put them on…

I scribbled out the names after I uploaded them on the computer… ;)

So when we got the goodies made we had to put them in brown paper bag and attach the pretty home made tags on them.  They turned out kinda cute I think…

Not too shabby, If I do say so myself!  And I just did! :)

Spiced Cocoa Latte

This recipe is right up my ally.  Why, you ask?  Because I love coffee and I love cocoa.  It’s what one might call a win/win situation!! :)

So here we go!!

Yumminess All up in Here!!

Spiced Cocoa Latte

What you’ll need:

  • 3 cups water
  • 1/4 teaspoon ground cinnamon
  • 5 tablespoons freshly ground coffee
  • 3 cups 1% milk
  • 6 teaspoons SPLENDA® No Calorie Sweetener, Granulated
  • 3 teaspoons unsweetened cocoa powder
  • 6 cinnamon sticks
  • whipped topping of your choice

What to do:

  1. Fill coffeemaker with water. Mix ground cinnamon with coffee and brew one pot.
  2. While coffee is brewing, heat milk in microwave on low until warm.
  3. Pour equal amounts of coffee into 6 mugs.
  4. Add 1 teaspoon SPLENDA® Granulated Sweetener and 1/2 teaspoon cocoa to each mug. Mix well; top off with milk. Garnish with whipped topping and cinnamon sticks.

Just Like Starbucks Pumpkin Spice Latte

What you’ll need:

  • 2 c. milk
  • 2 T. canned pumpkin
  • 1/4 c.  splenda (or sugar)
  • 2 t. vanilla
  • 1/2 t. pumpkin pie spice
  • 1/2 c. strong brewed coffee (or 1/4 c. espresso)

What to do:

In a saucepan, stir together milk, pumpkin and splenda (sugar).  Cook and stir over medium heat until steaming.  Remove from heat, stir in vanilla and pumpkin pie spice, transfer to a blender and blend for 15 seconds or until foamy.  You can skip this last step and just whisk vigorously in pan if you want.  Pour into a large mug (or two if you decide to share).  Add coffee to top.  Top with whipped topping of choice (I used Reddi Whip). Sprinkle with cinnamon, nutmeg or more pumpkin pie spice.  ENJOY!!

You will not be disappointed with this recipe! It’s amazing! And pumpkin is really good for  you, so it’s almost like a health drink!  teehee  ;)

gREEN sMOOTHIE

I searched “green smoothie” the other day on the internet and I came upon this recipe.  It is actually really good, although it is quite “pulpy”.  It also isn’t slushy at all…if you like it that way , I would freeze your grapes and or banana or add ice.  It has great flavor and I didn’t have to add any extra sweetener to it at all…

Without further ado, I present to you…

Green Smoothie

Ingredients:

  • 2 cups fresh baby spinach
  • 1 cup green grapes (can be frozen)
  • 1 medium banana, broken up
  • 1/4 cup green pepper, chopped
  • 1/4 cup apple juice

What To Do:

  • I put the pepper and juice in first and blended well.
  • Then I added everything else and blended til smooth…I also added a few ice cubes as I like my smoothies slushy…

I have found another smoothie recipe that I really like and thought I would share it with ya’ll.

As most of you know, I am doing LDL…which is a “whole food” type of lifestyle.  Eating things that are UNprocessed and don’t have sugar added to them.  I will refrain from calling it a “diet”, because if you use this WOE (Way Of Eating), you’ll never have to “diet” again…

The thing I really like about LDL is that you can be FULL and SATISFIED and eat foods that you love!!! I have tried lots of recipes from the LDL book and from their website and I have only had one that I didn’t like (and for the record, I made it wrong).

Anyways….this is a smoothie recipe that actually is not from LDL, but is LDL approved because of  it’s ingredients.

Energy Smoothie

Ingredients:

  • 1- 11/2 cups orange juice ( i used white grape peach, i didn’t have orange)
  • 15 blueberries
  • 11 green grapes (mine were frozen)
  • 10-12 pineapple chunks (1/7 of a whole pineapple)
  • 1 banana, broken into pieces
  • 4 strawberries
  • 4 -6 ice cubes

What To Do:

  • blend OJ and banana together til smooth
  • add rest of fruit and ice
  • blend til smooth
  • enjoy

White Chili (chicken)

I had this for dinner last night (2 soup mugs full)  around 5:30 PM, and I WAS NOT HUNGRY again til 12:00 PM today!! It was so filling and so yummy!!  This recipe is great for LDL because it doesn’t have any wheat or added sugar in it.  Everything in it is LDL approved!! :mrgreen:

White Chicken Chili

Ingredients:

  • 1 medium onion, chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 boneless skinless chicken breast halves (4 ounces each), chopped
  • 2 cans (14 ounces each) chicken broth
  • 1 can (4 ounces) chopped green chilies
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1-1/2 teaspoons cayenne pepper
  • 3 cans (14-1/2 ounces each) great northern beans, drained, divided
  • 1 cup (4 ounces) shredded Monterey Jack cheese
  • Chopped jalapeno pepper, optional
  • Sour Cream, optional (only FF would be LDL approved)
  • Tortilla/Corn Chips, optional (these would not be LDL approved)

Instructions:

  • In a large saucepan over medium heat, cook onion in oil for 10 minutes or until tender. Add garlic; cook 1 minute longer. Add the chicken, chicken broth, green chilies, cumin, oregano and cayenne pepper; bring to a boil.
  • Reduce heat to low. With a potato masher, mash one can of beans until smooth. Add to saucepan. Add remaining beans to saucepan. Simmer for 20-30 minutes or until heated thoroughly.
  • Top each serving with cheese and jalapeno pepper if desired. Yield: 10 servings (2-1/2 quarts).

Monday

good morning!! didn’t sleep well last night so i’m kinda draggin’ this morning…

didn’t get breakfast at 10 so i will prolly have my smoothie later…

“B” (late) 11 AM *HUNGRY* 3 egg “omelet” with mushrooms, onions, tomatoes and 2% sharp cheddar cheese, coffee, one light rye crisp with my chicken salad (LOVE this stuff) …i don’t think i had my pan hot enough when i put my eggs in so they stuck pretty bad so my “omelet” turned into scrambled eggs….grrr

L 2:30 PM *hungry* big salad (romaine lettuce, tomato, cucumber, carrots, mushrooms, sunflower seeds, ranch), 2 hard boiled eggs, banana, water

D 7 PM *hungry* pinto beans w/ smoked sausage ( mostly beans) and a sprinkle of shredded cheese (i skipped the birthday cake and ice cream)

Tuesday

B 10:00 AM *not very hungry* after coffee and Bible reading i had a strawberry/banana smoothie YUMMY!! inlove

L 1:30 PM *hungry* pizza soup w/popcorn, one light rye crisp w/chicken salad, half a cucumber, handful of frozen grapes happy

D 7:30 PM * lil’ hungry* two pieces LDL crustless pumpkin pie w/sf cool whip, decaf coffee cheesy

Wednesday

rough day….head is KILLING me!!! Cry

B 10 AM *not hungry* had a banana

L 1:30 PM *HUNGRY* finished up the pizza soup from last week with a few tortilla chips (yes, i know, they are a no-no, but the ingredients are like literally corn, oil and salt, and they have the lowest fat content i have found for tortilla chips {4.5g, for 13 chips}) and i also had part-skim mozz on top of it… grrr

D 7 PM *hungry* salad, popcorn, LDL pumpkin pie, diet gingerale w/no sugar added cranberry juice, handful of frozen grapes

I’m joining Lisa for Tempt my Tummy Tuesday!!!

Buster and I have started eating healthier.  We have been doing the “Let’s Do Lunch” program since September.  We kinda got off track at Thanksgiving and haven’t totally gotten back on it yet…but we are working toward that end… I found this sugar free coffee mix that’s fabulous and then I made it even better!!  I even made up a cute little name for it (sry, creative, I am NOT).

Cinna-Nilla Delight

 what you need:

  • “Maxwell House International Cafè”  French Vanilla Cafè Coffee mix
  • 1-2 T. Splenda
  • Cinnamon to taste

what to do:

  • Spoon coffee mix into mug of choice (according to directions)
  • Add to cup 1-2 T. Splenda (or as much as you like)
  • Sprinkle cinnamon into cup to taste (I probably use 1-2 t.)
  • Add water according to directions

Cuddle up with a good book and enjoy!! 

“Foodie Friday” (my very first meme)

I thought it would be a great idea to start a meme of my very own.  To be a part of this meme simply visit your favorite family, recipe, home, etc. blog and find a recipe you want to try  OR it can just be a new recipe you are trying from anywhere!  Try the recipe (make sure to take pictures and make note of any tips you find useful while making it) at home.   Then blog about it (if it is from another blog, you could add a link to the original post if you wanted).  It’s that simple.  Once you post on your blog, come on over and link up for my weekly “Foodie Friday” Meme!!!

I am so excited I can hardly stand it.  I hope I can get Mr. Linky to cooperate!! I have heard horror stories.  But I am keeping a positive attitude!! Mr. Linky and I are going to be good friends!! (right Mr. Linky?!?)

So, without further ado, I bring you (drum roll please)…

Taco Rice Casserole (from Laura@HomemakingJoyfully)

What you need:

  • 1 lb ground beef
  • 1/2 medium onion, diced
  • 1 1/2 cups uncooked brown rice ( I used regular white rice *note* if you use white rice adjust cooking time)
  • 1 (15 oz) can diced tomatoes and enough water to make 4 cups (I used diced tomatoes with green chilies)
  • 4 t. taco seasoning (about 2 packets)
  • shredded cheese to put on top

What to do:

  • in a large pot, brown ground beef and onion, drain excess fat
  • add remaining ingredients (except cheese) and bring to a boil
  • reduce heat to low and simmer until rice is done (45 minutes to an hour) stirring occasionally

Serving Suggestions:

  • in a bowl with shredded cheese
  • over tortilla chips, with cheese
  • as dip for tortilla chips, with cheese
  • rolled in a corn or flout tortilla with cheese

Are you seeing a pattern of CHEESE here?? LOL we LOVE cheese!!  I left mine a little soupy cause I used it for dip for chips and cheese!!!

something new!?!

i have been thinking about starting something new here @ blog-diggidy for some time now.  I think it might be time!! how many of you would like to join me in a new meme?? carnival, whatever you wanna call it???  it’s kind of different from others i’ve seen.  what i want to have everyone do is take a recipe for SOMEONE elses blog, try the recipe and then blog about it , leaving a link to the original blog.  then link up with me so we can all share the goodness!! its a recipe meme, but with a twist.  a good way to network, i think.

now if i can just get the mr. linky people to cooperate and acknowledge that i am a paid member so i can name my own meme, we can get started….i will keep you posted!! let your friends know about this new meme…i think i’m gonna name it “Foodie Friday”, maybe  “Food&Friends Friday”….not quite sure yet,what do you think??? any other name ideas??

Tempt My Coffee Luvin’ Tummy!!

Instead of giving a recipe today, I am going to tempt your tummy’s with something that I LOVE, but don’t make myself.   I like to drink coffee almost every morning.  Sometimes I drink it black with a little Splenda.  Somtimes, though, I like to add something extra to it.  This is one of my favorites

…AND even though it’s “skinny”, it tastes REALLY good, which is important!! The price isn’t bad either  (I buy mine at Walmart).  You can’t always find the “skinny”, but the original one only has 1.5 grams of fat, 40 calories and 6 grams of sugar.  So, if you can’t find the skinny, the original isn’t terrible, either!!
