So, as many of you know, I have been kind of out of commission for about a month now. It does not agree with me, I can tell you that. Yes, I am “one of those” people. I do not like to be waited on and have things done for me, well sometimes I do, but not ALL.THE.TIME!!!!
So, even though I had a headache all day yesterday, I thought I would see if I could make dinner without burning down the house or collapsing in the kitchen.
So, I went to one of my favorite recipe websites and found a recipe that I had all the ingredients for and made dinner for my family ALL.BY.MYSELF!!!!
Yes, I know you are all impressed (NOT)
So here is what I made for my family. It’s super easy and super yummy!!! I altered the original recipe to what we like. Here is the original recipe.

Crispy Oven Fried Chicken
3/4 c. dry potato flakes
1/4 c. grated parmesan cheese
1 1/2 t. garlic salt
8 chicken tenders (seasoned with salt and pepper)
1/4 c. butter or margarine
1 egg
parsley ( to taste)
thyme (to taste)
Heat oven to 375 degrees. Line baking sheet or 9×13 baking dish with foil. Combine potato flakes, parmesan cheese and garlic salt in med. bowl til well mixed. In another bowl, melt butter and allow to cool just a bit and then add one egg and mix well. Dip chicken tenders into melted butter and egg; roll in potato flake mixture to coat well. Place on/in pan. Bake 30-40 minutes or until chicken is tender and golden brown.
I served California Blend veggies with my chicken and everyone enjoyed. In fact, Buster said he wants me to make it again, Pumpkin Seed, too!!!!
