Crustless Pumpkin Pie!!!

For some reason, my blog does not like the new Internet Explorer. Ever since I updated, my blog doesn’t want to work right. So, I downloaded Mozilla on my Net-book and Wa-La, I am up and running normally again!?!?! (my blog is anyway…lol)
Anywho, wanted to share another LDL recipe with ya’ll so here goes. This is a simple recipe and you’ll never even miss the crust!!!
LDL Pumpkin Pie
what you need:
  • 1 15 0z. can pure pumpkin (this is the small can)
  • 1 12 oz. can fat free evaporated milk
  • 2 eggs
  • 1 1/2 t. vanilla
  • 1/4-1/2 c. (to taste) splenda (this is the sweetener I use, use what you like)
  • 1/4 c. mashed banana (2/3 or so of a small banana)
  • 1 1/2 t. cinnamon
  • 3/4 t. ginger
  • 1/4 t. cloves
  • 1/4 t. nutmeg
  • 1/4 t. allspice
  • 1/2 t. salt
what to do:
  • Combine pumpkin, milk, eggs, vanilla, splenda and banana in bowl. Stir til smooth.
  • Add in all the spices and the salt.
  • Spray 8×8 or 9×9 baking pan with non-stick spray. Pour in the pumpkin mixture. Bake 50-60 minutes at 325º. When it’s done a toothpick stuck into the center will come out clean. May require a little more than time stated.
I serve this with sugar free cool whip, cause that’s what I can have on LDL.
