Lemon Pepper Chicken…

So, the other day I said I wanted to start posting recipes on here, gluten and sugar free recipes, to be exact.

So, here you are , a SIMPLE recipe for a tasty dish!!!  Your welcome!! =)

JO’S LEMON PEPPER CHICKEN

what you need:

  • one chicken (boneless, skinless breast per person you plan to feed (two if they are small or several tenders)
  • lemon pepper ( I used Mrs. Dash)
  • garlic salt
  • lemon juice
  • extra light tasting olive oil (enough to cover the bottom of your pan)

what to do:

  • place your chicken breasts on a plate
  • pour a little amount of lemon juice on each one
  • sprinkle with lemon pepper and garlic salt to taste
  • cover plate of chicken with plastic wrap and refrigerate an hour or two (the longer you chill, the more the flavors will meld with the chicken)
  • remove from fridge
  • heat oil in pan for a few minutes til hot
  • add chicken to pan and cook 4-6 minutes on each side (the thicker your chicken breast, the longer you will need to cook it)

We don’t eat potatoes around here (we are doing the “Let’s Do Lunch” program), so I serve mine with any number of vegetables and or salad.  But you could serve with baked, boiled or even mashed potatoes, if you desire.
