Home Sweet Log Home

The director here at camp is building his mom and dad a house here.   They live down state, but are thinking about selling their house and moving up here full-time.  So they are building a VERY nice home for them to live in.  In the basement of this home will be “prophet rooms” to house guest speakers and Preachers when they come to camp.

The house they are building is a log home.  The interior is all wood also.  Wood floors, ceilings, walls.  That’s a lot of wood folks!! But is is gorgeous.  I think it would be totally appropriate to get some nice log furniture to top it all off.  Maybe that would be over-kill, I don’t know.  But it would be a great look!!



Crock Pot Wednesday (repost from last week when i couldn’t link up)

I find it totally AMAZING that you can make brownies in your crock pot!! I loves me some brownies!!

Decadent Raspberry Brownies

What you need

  • 1/2 c. butter (can use margarine)
  • 2 oz unsweetened chocolate
  • 2 eggs
  • 3/4 c. sugar
  • 1/3 c. seedless red raspberry jam
  • 1 t. vanilla
  • 3/4 c. all-purpose flour
  • 1/4 t. baking powder

Vanilla Ice Cream, optional    Chocolate Ice Cream Topping, optional    Fresh Raspberries, optional

What to do

  • Generously grease two 1-pint straight-sided, wide-mouth canning jars.  Flour greased jars; set aside
  • In a saucepan melt butter and chocolate over low heat.  Remove from heat.  Stir in eggs, sugar, jam and vanilla.  Using a spoon, beat lightly just until combined.  Stir in flour and baking powder.  Pour batter into prepared jars.  Cover jars tightly with greased foil, greased side down.  Place jars in a 3 1/2-4-quart slow cooker.  Pout 1 cup water around jars.
  • Cover; cook on high-heat for 3 to 3 1/2 hours or until a toothpick inserted nears centers of brownie rolls comes out clean.  Remove jars from cooker; cool 10 minutes.  Using a metal spatula, loosen brownies from sides of jars.  Carefully remove rolls from jars.  Place rolls on their sides on a wire rack; cool completely.  To serve, cut each roll into 6 slices.  If desired, serve with ice cream, chocolate topping, and /or fresh raspberries.

M-I-C-K-E-Y, M-O-U-S-E….

Growing up, one of the most exciting things I could think of was one of those Disney vacations.  We never took one.  We went to Cedar Point and Sea World in Ohio…Took a lot of camping trips, but never went to Disney.  UNTIL I MOVED OUT!!

Yeah, My parents took my youngest sister to Disney after I moved out of the house.  What a jip!! I keep trying to convince Buster that we need to go.  He says maybe someday!! I don’t know, now that I’m older, I think it may be a little over rated, but I still wouldn’t mind going!!

Today’s recipe is a favorite of mine, especially when I go to a party or host one.  These are easy to make and very tasty!!  You can omit items you don’t care for and add what you do without changing the overall flavor of this item.  Without further ado, I give you…

Cheese Ball

2 (8 oz) packages cream cheese (or neufchatel)

1/4 c. green pepper (optional)

2 T. seasoned salt

half a small onion

1 can crushed pineapple

1 package Carl Buddings ham

1/2 c. chopped nuts (optional)

Combine ingredients and form a ball.  Chill.  Garnish with nuts if desired.

Getting Healthy

So last week I posted about cutting sugar out of my diet. HA!  It’s not as easy as you think!! It’s not that hard when you are at home, but when you are out and about or you have functions to go to, it’s not easy at all!!  I struggled the end of last week, but I didn’t do too bad.

I got to thinking anyway, and I figure if I even just have less sugar, that’s better than no change at all.  I always run into that problem when trying to make changes, I want all or nothing and that’s not always the best way to go.  So I am limiting the amount of sugar I have to a minimal amount and I am incorporating a few nutritional supplements to even everything out.  Because I don’t always get everything I should out of what I eat.  I suspect it’s that way for a lot of people.  This way, I won’t feel deprived of what I want and I get what I need.



Menu “Plan” Monday…

Laura hosts Menu Planning Monday for us every Monday.  This is a great way to get ideas  to add to your menu and to share your ideas with others, as well.  So if you are sick of the same old thing for supper, join us and get some new ideas to spice up your meals!!  This will also save you money on going out when you just can’t decide what to have AND when you shop, because you’ll know exactly what to get when you go!!!

We had a very rough week last week…one of the boys from our youth group unexpectedly went to heaven and we were not home a lot and when we were, we didn’t stick to a menu….we will be trying this one again this week.  This is what this weeks menu looks like so far….

  • Salmon Patties, Potatoes, Cream Style Corn
  • Chicken Alfredo, Veggies
  • BLT’s
  • Tacos (didn’t get to these last week)

For Gordy…

After hearing what I did yesterday, I  need to get this off my chest.  I am sorry if this offends anyone, that is not my intention, but if I don’t get this out of my head and off my heart, it will continue to plague me with anger and hurt and depression.  This is to all the bullies out there that think that they can just push people around and make fun of people and dog other people for whatever reason they do it.  Are you trying to make yourself look good?  Ease your own pain?  Just make someone else miserable??  It isn’t necessary and it’s very destructive!!!  God says we are to love others, build them up and help them along the way, not hate those that are a little different,  tear each other down, and be a stumbling block!!

There was a young boy in our Church youth group.  A funny but quiet boy.  A shy boy.  A boy with a ton of potential to do great things for the Lord.   A boy who, when overwhelmed by them, took the problems in his life and turned them inward toward himself.  A boy who was preyed upon by those around him.  They saw his strengths and weaknesses and instead of focusing on his strengths and building him up with those, they chose to focus on his weaknesses  and magnify them.  They saw that he was different and instead of embracing his uniqueness and encouraging him in his endeavors, they tore him down and made him feel bad for it.

To those of you who bullied this shy, quiet, potential- filled, young man~ WHAT HAPPENED IS NOT YOUR FAULT.  He made the choice he made, not you, BUT  that being said, YOU SHOULD FEEL VERY ASHAMED!! Did you pick on him because he was a Christian?  Because he wore glasses?  Because he didn’t swear, smoke and do immoral things?  Why did you feel the need to bully him?  To make him feel unworthy to be your friend or to just be a normal kid enjoying his first year of high school??? WHY??

I think this hits a nerve with me because I too, was bullied in school.  I was teased because I am adopted.  I was teased because I wear glasses.  I was teased because I was different.  What’s wrong with being different?? If everyone was the same, do you know how boring that would be?  Our differences are what make us unique and special, they should be celebrated, not picked on and ridiculed!!  People felt like they could push me around and make me feel inferior because I was different.

This message is for all those out there still going through their personal pain and hurt…

THERE IS NOTHING WRONG WITH BEING DIFFERENT!!! God made each and everyone of us and God doesn’t make mistakes!! He is perfect and knows everything and He fearfully and wonderfully made you, the Bible says so!!  So, the next time someone picks on you, tell them that you hope they find Jesus and that you hope He will save them and lift them up so that they don’t have to knock others down to lift themselves up!!!!

“Dieting”

So, I have decided, once again, to “diet”.  This time, though, I am making a lifestyle change that I am going to stick with.  Everyday of the week, but Sunday, I am cutting out refined sugar.  No more, cookies,  brownies,  ice cream, pudding or any of that stuff!!  Which also means, I cannot have my favorite creamer anymore in my coffee!!! WHAT!?! I know, I know, but I must lose some weight before summer.  I refuse to be miserable this camp season!!

I am even thinking about adding an herbal diet supplement or two to get even healthier.  I want to add more protein and fiber to my diet and less fat and sugar!! Plus, I am going to TRY to exercise EVERYDAY!! Hopefully blogging about it and talking about it will provide some accountability and I’ll actually stick to it this time…so ask me now and then how I am doing so I have to tell you!! Thnx!!

A “Joint” Effort…

My MIL recently had knee surgery to completely replace her left knee.  She had been having problems with that knee for several years, then last year she did some major damage to it.  Before her surgery, her Doctor had her taking   chondroitin glucosamine trying to reduce pain and regain some strength and flexibility.  The damage proved to great for this to be the only course of treatment, thus the replacement surgery.  Through surgery, rehabilitation and more chondroitin glucosamine therapy, she now  has very little pain and has regained strength and flexibility in that knee.  Now she can enjoy her grandchildren more as she can do more with them!!

Tempt My Bread Luvin’ Tummy!

Are there still people out there that make their own home-made bread??  I know there are because I go to Church with a lady who does and I do.  We also buy our own wheat and mill it, to preserve the integrity of the ingredients we use.  Plus, it’s super fun!!   Anyway, we buy hard red wheat berries and mill them into flour.  This recipe uses that flour, but you can use any whole wheat flour that you like.  This is also a bread machine recipe…follow your bread machines directions as to what to add in what order.  I adapted this for myself as I do not have a bread machine (Buster doesn’t like the crust when put in a bread machine).  The amounts will vary depending on the loaf size (or in my case how many loaves) The directions will not be for a bread machine. I use a KitchenAid mixer to make my bread.  You will start out using the paddle attachment to mix then change to the dough hook to finish.

Excellent Whole Wheat Bread

What you need:

  • water, 80°F    1lb~1 cup, 1.5 lbs~1 1/4 cup, 2 lbs~1 1/2 cups
  • oil    1 lb~1 1/2 Tablespoons, 1.5 lbs~2 1/2 Tablespoons, 2 lbs~ 3 Tablespoons
  • molasses (can use honey also)    1 lb~ 2 Tablespoons, 1.5 lbs~ 2 1/2 Tablespoons, 2 lbs~3 Tablespoons
  • salt  1 lb~ 1 teaspoon, 1.5 lbs~ 1 1/2 teaspoons, 2 lbs~ 2 teaspoons
  • dry milk  1 lb~ 1 Tablespoon, 1.5 lbs~2 Tablespoons, 2 lbs~ 3 Tablespoons
  • whole wheat flour  1lb~ 2 1/2 cups, 1.5 lbs~ 3 3/4 cups, 2 lbs~4 cups
  • wheat gluten   1 lb~1 1/2 Tablespoons, 1.5 lbs~2 1/2 Tablespoons, 2 lbs~ 3 Tablespoons
  • active dry yeast   1lb~1 1/2 teaspoons, 1.5 lbs~2 teaspoons, 2lbs~2 1/4 teaspoons

**if using a bread machine select Whole Wheat Cycle**

What to do:

  • measure water into measuring cup with enough room to add yeast; add yeast to water and allow to foam
  • combine oil, molasses (or honey), and water (once it foams) in  mixing bowl; mix well
  • combine salt, dry milk, 3/4 of your flour and the gluten in a separate bowl
  • add dry ingredients to wet and mix well
  • add enough remaining flour and mix until dough begins to form a rough ball (mixture will not cling together into a smooth ball yet)
  • let sit for 10 minutes (take paddle out and replace with kneading hook)
  • adding enough flour to keep dough from sticking start mixer and begin kneading dough.  only add enough flour to make a smooth dough ball that doesn’t stick to the sides of your bowl.  once you have this, do not add any more and continue kneading for about 10 minutes
  • take dough out of mixing bowl and place in a greased plastic bowl (roll to coat entire surface with grease) and loosely cover with plastic wrap (spray with cooking spray so it doesn’t stick to dough)
  • place in a warm/draft free place to rise for about 1 hour or until doubled in size
  • punch down and form loaves; put into loaf pans
  • allow to rise until dough rises above top edge of pan
  • bake at 350° for 50-60 minutes
  • brush baked loaf(loaves) with butter, remove from pan and cool on a cooling rack
  • put bread in gallon size zip-lock bag once completely cooled to keep fresh….you can store bread in refrigerator to keep longer
