This is a great time of year to haul out all your stew, soup, chili and chowder recipes!! Warm, soothing and filling. It just doesn’t get better than that on a cold crisp day!!! And when you can put it in the crock and let it do it’s own thing, it’s even nicer!!
What you need
- 4 c. shredded cabbage with carrot (coleslaw mix) or coarsely chopped cabbage
- 1 1/2 c. peeled, cubed potatoes
- 1 c. sliced carrots
- 1 c. cored and coarsely chopped red apple
- 12 oz. cooked cheese smoked sausage, sliced
- 3/4 t. fennel seeds, crushed
- 2 1/4 c. chicken broth
- 1/3 c. apple juice
What to do
- In a 3 1/2 -4 quart slow cooker place coleslaw mix, potatoes, carrots and apple. Place sausage on top of vegetables. Sprinkle with fennel seeds. Pour broth and apple juice over all.
- Cover and cook on low heat setting for 7-8 hours or on high heat setting for 3 1/2- 4 hours. Spoon into bowls.
