This could possibly be my favorite time of year to cook!! This and Christmas (I usually make baked goods for gifts at Christmas). This recipe is a family favorite…we used to buy them from the Amish, now i have the recipe!!
PUMPKIN ROLL
What you need:
PUMPKIN ROLL
- 3 eggs, beaten
- 1 c. sugar
- 3/4 c. flour
- 2/3 c. pumpkin
- 1 t. baking soda
- 2 t. cinnamon
FILLING
- 8 oz. cream cheese
- 1 c. powdered sugar
- 1 t. vanilla
- 1/4c. butter
- nuts or cherries if you like
What to do:
- Line cookie sheet with was paper; pour out pumpkin roll mixture. Bake at 350° for 10-14 minutes
- While still warm and pliable, top with filling mixture; roll
- Allow to cool; cover with plastic wrap and refrigerate at least 2 hours before serving;store in fridge
