Menu Plan Monday…

Laura hosts Menu Planning Monday for us every Monday.  This is a great way to get ideas  to add to your menu and to share your ideas with others, as well.  So if you are sick of the same old thing for supper, join us and get some new ideas to spice up your meals!!

I am going to switch this up a bit because I am not sure what I am doing in what order this week, if I like it, I’ll keep it this way!!

Lunches:

  • salad
  • mac and cheese (home-made)
  • salmon patties
  • cheese and crackers
  • left-overs

Dinners:

  • chicken breast sandwiches, salad
  • cream cheese crock pot chicken, noodles, veggie (still haven’t done this one)
  • meat loaf, potatoes, veggie
  • venison steaks, potatoes, veggies
  • barbecued pork sandwiches, fries, veggie (haven’t gotten to this one either)

Tempt My Tummy Tuesday…

This could possibly be my favorite time of year to cook!!  This and Christmas (I usually make baked goods for gifts at Christmas).   This recipe is a family favorite…we used to buy them from the Amish, now i have the recipe!!

PUMPKIN ROLL

What you need:

PUMPKIN ROLL

  • 3 eggs, beaten
  • 1 c. sugar
  • 3/4 c. flour
  • 2/3 c. pumpkin
  • 1 t. baking soda
  • 2 t. cinnamon

FILLING

  • 8 oz. cream cheese
  • 1 c. powdered sugar
  • 1 t. vanilla
  • 1/4c. butter
  • nuts or cherries if you like

What to do:

  1. Line cookie sheet with was paper; pour out pumpkin roll mixture.  Bake at 350° for 10-14 minutes
  2. While still warm and pliable, top with filling mixture; roll
  3. Allow to cool; cover with plastic wrap and refrigerate at least 2 hours before serving;store in fridge

  • deluxe salad

  • chili
  • cream cheese crock pot chicken, noodles, veggie
  • venison, potatoes, veggie
  • Thanksgiving Dinner!! YAY!! I am making the green bean casserole and sweet potatoes!!
  • barbecued pork sandwiches, fries, veggie

In our old house, we had a tv in every room practically, so when we moved into a much smaller house, we had a bunch of tvs and no use for them all.  We tried selling them in our yard sale we had this past summer, but alas, we only sold one.  So when we went to a friends house and saw that she had like a 13 inch tv she was trying to watch movies and stuff on, we gave her the biggest of what we had (32 or 35 inch , I can’t remember which, AND the entertainment center that it was originally in at our house (the one she had was too small for it).  Just a small thing like that made us feel so good…that’s what it’s all about folks.  GIVING, try it, you’ll love it!!

OUR WAY OUT

ROMANS 5:8-9 But God commendeth His love toward us, in that, while we were yet sinners, Christ died for us. Much more then, being now justified by his blood, we shall be saved from wrath through him.

GOD’S PERSONAL PROMISE

ROMANS 10:13 For whosoever shall call upon the name of the Lord shall be saved.

Take God at his word and claim His promise for your salvation. Bow you head right now and sincerely ask Jesus Christ to forgive your sins and to save your soul. Saying a prayer does not save you!! You must believe what the Bible says and mean it in your heart to be saved!!!

ROMANS 10:9-11 That if thou shalt confess with thy mouth the Lord Jesus, and shalt believe in thine heart that God hath raised him from the dead, thou shalt be saved. For with the heart man believeth unto righteousness; and with the mouth confession is made unto salvation. For the scripture sayeth, Whosoever believeth on Him shall not be ashamed.

Once you are eternally saved, you are always eternally saved…

HEBREWS 13:5B…for he hath said, I will never leave thee, nor forsake thee.

My son was killed in an auto-accident five years ago today (November 5, 2004)at 10 years old (He asked the Lord to be his Savior when he was 7)!! Crock Pot Wednesday

This is a great time of year to haul out all your stew, soup, chili and chowder recipes!! Warm, soothing and filling. It just doesn’t get better than that on a cool crisp day!!! And when you can put it in the crock and let it do it’s own thing, it’s even nicer!!

Southwestern White Chili

What you need

  • 1 c.  chopped onion
  • 4 garlic cloves, minced
  • 2 t. ground cumin
  • 1 t. dried oregano, crushed
  • 1/4 t.  ground cayenne or red pepper flakes
  • 3 (15 1/2 oz) cans northern beans, drained and rinsed
  • 2 (4 oz) cans diced green chilies
  • 4 c. chicken broth
  • 3 c. chopped , cooked chicken
  • 2 c. shredded Monterey Jack cheese (8 oz)
  • sour cream (optional)
  • more green chilies for garnish (optional)

What to do

  • In a 3 1/2 to 6 quart slow cooker, place onion, garlic, cumin, oregano, red pepper, beans, 2 cans chili peppers, broth and cooked chicken.  Stir to combine
  • Cover and cook on low heat setting for 7-8 hours or onhigh heat setting for 3 1/2- 4 hours.  Stir in cheese until melted at end of cooking time
  • Ladle the chili into 8 bowls.  If desired, top with sour cream and sprinkle with additional chilies.

Tempt My Tummy Tuesday…

This could possibly be my favorite time of year to cook!!  This and Christmas (I usually make baked goods for gifts at Christmas).  I love soups, chili’s, stews, casseroles.  Easy and tasty, that’s for me!! This is a simple chicken recipe that my family loves.

Baked Chicken Dish

What you need:

  • 6 c. cooked chicken breast, chunked
  • 1 medium onion, chopped
  • 2 c.  shredded cheddar cheese
  • 2 c. taco chips, slightly broken up
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 pt. sour cream
  • 1/2 c. milk
  • medium can mushrooms
  • pepper to taste

What to do:

  1. In a 9×13 baking dish, layer chicken chunks, cheese, taco chips and onion
  2. In a separate bowl, mix both soups, sour cream, milk and pepper
  3. Pour soup mixture over top of chicken mixture
  4. Top with mushrooms; bake at 350° for 1 hour, serve warm

TeeHee.  Was looking into  mexico vacation deals recently because I hear it’s amazing there.  I have never been out of the country and I think it would be fun to go somewhere that has a different culture than we do here int he US.  I hear the food is good and they have lots of exciting things to do there.  Have any of you been there?? Is it all they say it is??

Easy Veggie-Beef Soup

What you need

  • 1lb ground beef
  • 1 (14 oz)can beef broth (1 2/3 cups)
  • 1 1/4 cups water
  • 1 (10 oz)  bag frozen veggies, any variety you like
  • 1 (14 1/2 oz) can diced tomatoes
  • 1 (1o 1/4 oz) can tomato soup
  • 1 t. dried minced onion
  • 1 t. dried italian seasoning, crushed
  • 1/4 t. garlic salt

What to do

  • In a large skillet cook ground beef til brown; drain any fat
  • Transfer meat to 3 1/2 -4 quart slow cokker.  Add remaining ingredients to cooker
  • Cover; cook on low-heat setting 7-8 hours or on high -heat setting for  3 1/2-4  hours.
