Tempt My Tummy Tuesday

This is a super-easy recipe for potato soup.  And it is soooo yummy!! This time of year, I will probably make this once a week , that’s how easy it is and how much my family loves it!!

Chunky Potato Soup

What you need:

  • 3 medium red potatoes
  • 2 c. water
  • 1 small onion
  • 3 T. butter
  • 3 T. all-purpose flour
  • crushed red pepper flakes
  • black pepper to taste
  • 2 1/2 c. milk
  • 1/2 t. sugar
  • 1 cup shredded cheddar (I always use more, cause we LOVE cheese!!)
  • 1 c. cubed ham

What to do:

  1. Peel potatoes and cut into 1″ cubes
  2. Bring water to a boil in a large saucepan; add potatoes and cook until tender
  3. Drain potatoes, reserving liquid; set potatoes aside
  4. Measure 1 cup or reserved liquid, adding water if necessary; set aside
  5. Peel and finely chop onion.
  6. Melt butter in saucepan over medium heat; add onion, cook stirring frequently until onion is translucent and tender, but not browned
  7. Add flour to saucepan, season with pepper  and red pepper flakes, both to taste; cook for 3-4 minutes
  8. Gradually add potatoes, reserved liquid, milk and sugar to onion mixture in saucepan; stir well
  9. Add cheese and ham
  10. Simmer over low heat 15-20 minutes , stirring frequently

  2. I am thinking about making this tonite. You really only need 3 potatoes? That doesn’t seem like a lot. Also, how many does this typically serve?

  3. sry i didn’t respond sooner…i have been down with the flu….yes, you really only need three, if they are good sized, i typically use 4. it will feed about 4 people!! you can double it with good results!!
