Quick Family Update…

Well, as you may or may not know….depending on how often you visit, I haven’t posted for almost a week.  I did my Menu Plan Monday, then nothing.  That is because on Tuesday I found out, after being on the brink of death sick for 5 weeks, I have pneumonia.  I did not have pneumonia that long, but I had been sick on and off for that long.  Dr. said it isn’t the worst case he has seen, or even close, but he was glad I came in when I did so it wasn’t as bad as it could have been.

So after two days in bed on the couch per Dr.’s orders, I still felt like death warmed over.  And still today I am not feeling 100%.  Not even 75% truth be told.  I feel like I’m running at about 45-50%. I hope this doesn’t last long!!!   And if I don’t quit coughing, I am going to have a melt-down!!!  So pray for a speedy recovery, would you please??

Also, please pray for pumpkin_seed, as she fights a virus this week, she is finally not running a fever!!

More diet pill research…

Do all diet pills work the same?? I  am not sure that they do….Some are an appetite suppressant, others are something else completely.  I don’t know a lot about diet pills, but I know there are several different “types”.  Some claim to help you  burn more calories, some claim to trap fat, and yet others claim to suppress appetite.  Is one kind better than another?? What are the price differences??  So much to think about….so little time!!  Do your research!!

pills pills and more pills…

It seems that you can take a pill for just about anything these days.  Depression, pain, weight loss, anxiety, the list just goes on and on.  My question is, are there any diet pills that work??  Do you have to take them forever??  If you stop taking them, do you gain back the weight you  lost?? Are these pills safe?? What are the side affects, if any?? Lots of things to think about!!

This is a super-easy recipe for potato soup.  And it is soooo yummy!! This time of year, I will probably make this once a week , that’s how easy it is and how much my family loves it!!

Chunky Potato Soup

What you need:

  • 3 medium red potatoes
  • 2 c. water
  • 1 small onion
  • 3 T. butter
  • 3 T. all-purpose flour
  • crushed red pepper flakes
  • black pepper to taste
  • 2 1/2 c. milk
  • 1/2 t. sugar
  • 1 cup shredded cheddar (I always use more, cause we LOVE cheese!!)
  • 1 c. cubed ham

What to do:

  1. Peel potatoes and cut into 1″ cubes
  2. Bring water to a boil in a large saucepan; add potatoes and cook until tender
  3. Drain potatoes, reserving liquid; set potatoes aside
  4. Measure 1 cup or reserved liquid, adding water if necessary; set aside
  5. Peel and finely chop onion.
  6. Melt butter in saucepan over medium heat; add onion, cook stirring frequently until onion is translucent and tender, but not browned
  7. Add flour to saucepan, season with pepper  and red pepper flakes, both to taste; cook for 3-4 minutes
  8. Gradually add potatoes, reserved liquid, milk and sugar to onion mixture in saucepan; stir well
  9. Add cheese and ham
  10. Simmer over low heat 15-20 minutes , stirring frequently

Crock Pot Wednesday…

Debbie, over at Dining with Debbie wanted me to join her  for Crock Pot Wednesday over on her blog.  Loving this recipe!!  I love cream cheese so anytime I  can use it, I am happy!!!

Cream Cheese Crock Pot Chicken

What you need

  • 4 lbs (give or take a little) chicken breast
  • 2 T. melted butter + 2T. for cooking onion
  • salt and pepper to taste
  • 1 package dry italian dressing mix
  • 1 can cream of mushroom soup (can use cream of chicken)
  • 1 (8oz) block cream cheese, cut up into cubes
  • 1/2 c. chicken broth
  • 1 large onion
  • crushed garlic to taste

What to do

  • Brush chicken with butter and sprinkle with the dry italian seasoning.
  • Cover and cook on low for 6 hours
  • About 45 minutes before done, brown onion in butter; wehn onion is translucent, add cream cheese, soup and chicken broth to pan.  Add crushed garlic and stir all ingr
  • Serve over hot rice

I like to fix meals my hubby likes, so when I started making meat loaf for him, I went to his mom to find out how he liked it.  I make it the same way every time, usually without variation.  This is the recipe my MIL gave me.  I usually don’t measure anything, I just add it til it looks good, but I’ll try my best.  Adjust everything until you get something you really like!!

Hubby’s Favorite Meat Loaf

What you need

  • 2 lbs ground beef ( I have also used venison, but recommend you use at least half ground beef for best flavor)
  • 1 small onion
  • 1/2-3/4 sleeve saltine crackers
  • salt, pepper, garlic salt (all to taste)
  • 4 T. ketchup (or to taste)
  • 4 T. barbecue sauce (or to taste)
  • 2 eggs
  • more ketchup and barbecue sauce to spread over top before baking

What to do

  1. Mix all ingredients together in a bowl.
  2. Spread into loaf pan; patting down firmly to make an even loaf.
  3. Mix together ketchup and barbecue sauce; spread over top meat loaf.
  4. Bake for about an hour at 375° or until meat thermometer reads 160°.
  5. Let sit about 5 minutes before serving.
  6. I serve this with mashed potatoes and a veggie, but you can serve with whatever sides you like!!

Do you wonder if  weight loss pills really work?  You know, you see those commercials on TV that say you don’t have to change your diet or lifestyle in any way, just take these pills.  Um, is that really true??  Sounds too good to be true to me.  I have never lost weight without watching what I eat and getting at least a little exercise.  Anyone ever tried pills?? Does  they work like they say they do?? Let me know, leave a comment!!
