My very first Crockpot Wednesday!! (saucy apricot chicken)

Debbie, over at Dining with Debbie wanted me to join her  for Crock Pot Wednesday over on her blog.  I used to subscribe to Quick Cooking Magazine (put out by Taste of Home) and I found a really good recipe in there that at first, I thought would be gross, but as it turns out, it’s phenomenal!!!! So pleased I can share this with you today, it’s a great time of year for it, since it’s getting cold!! Please enjoy!!

Saucy Apricot Chicken

What you need

  • 6 boneless , skinless chicken breasts (about 4 oz each)
  • 2 jars (12 oz each) apricot preserves
  • 1 envelope onion soup mix
  • hot cooked rice

What to do

  • Place chicken in slow cooker
  • Combine preserves and soup mix; spoon over chicken
  • Cover and cook on low 4-5 hours or until meat thermometer reads 170°
  • Serve over hot rice
