J-O-B

I actually went to school to be a Medical Assistant.  Back when my son was a baby, I took a 13 month course that included medical coding training courses.  I really enjoyed it and I graduated with honors!! Then I found out I was pregnant with my daughter and never got a job.  Bummer!! I got really sick after I had her (I am Bipolar) and couldn’t hold down a job after that.  It’s too bad, too.  I really enjoy that kind of work!! The point?? These are the type of jobs you should train for, because this type of work is always in demand!!

Fresh Veggie “Pizza”

“CRUST”:

2 packages  refrigerator crescent rolls

TOPPING:

2 (8oz) packages cream cheese

2/3 c. mayonnaise

1 1/2 t. dill weed

1 1/4 t. onion flakes

CHOPPED VEGGIES:

broccoli

cauliflower

carrots

any other raw veggie you want to use

Press crescent rolls flat into a jelly roll pan or flat cookie sheet.  Pinch perforations together to make one solid “crust”.  Bake as directed;  cool.  Mix topping ingredients together;  spread onto cooled crust.   Put chopped veggies on top.  Cut into squares to serve.

Yummy for any party or get together!!!

kids…

remember back in the day when all the neighborhood families had swing sets in their backyards and they were stacked with kids.  why don’t we see that anymore…oh wait, i know why.  because today’s kids are lazy!! the majority of them that is.  i know a boy who is 14 years old and weighs 320 pounds because all he does is sit in his room and play video games all day everyday!!   unless we want our children to be obese and have heart attacks at 35, let’s get them outside more playing in the sunshine and fresh air!!!

taco dip

does anyone like avocados?? i can’t remember if i do or not, lol.  isn’t that funny?? anyway, this recipe calls for them and i’m kinda scared to try it.  :)   anyone feel like trying it and letting me know how it is?? :)   it sounds yummy but, i don’t know….here is the recipe:

TACO DIP

3 medium ripe avocados

2 t. lemon juice

1/2 t. salt

1/4 t. pepper

1 c. sour cream

1/2 c. mayonnaise

1 package taco seasoning

2 (10 1/2 oz) cans plain Jalapeno bean dip

1 large bunch green onions

3 medium tomatoes (about 2 cups)

1-2 cans pitted black olives

1-2 cups shredded cheese (cheddar or a mixture, whatever you like)

1 large bag tortilla chips

Peel and mash avocados into medium bowl.  Add lemon juice, salt and pepper.  Combine sour cream, mayo and taco seasoning in another bowl.

Layer a large flat serving pan with a lip as follows:

1st layer – bean dip

2nd layer – avocado mixture

3rd layer – sour cream mixture

4th layer – tomatoes, onions and olives

5th layer – cheese

use chips for dipping

Oh, how I love coffee!! I am always on the look-out for cool coffee machines/gadgets!! Look what I found!! Nespresso makes these cool single serving machines that make great coffee!! I used to have a single serve machine, but these are way cooler than what I had!! AND they are easy to use.  You simple put in the flavored coffee “capsule” you want and at the push of a button, you have a hot cup of coffee!! Doesn’t get any easier or tastier than that!!

another round of Tempt My Tummy Tuesday!!

This recipe comes from  Buster’s grandmother.  She is an awesome cook and an excellent baker!! This recipe is for butterscotch oatmeal cookies.  These are a family favorite and for good reason, THEY.ARE.DELICIOUS.  So, without further ado, I give you…

Butterscotch-Oatmeal Cookies

1 1/2 c. flour

1 t. baking soda

1 c. shortening

3/4 c. brown sugar

3/4 c. white sugar

2 eggs

1 T. hot water

2 c. quick oats

1 t. vanilla

1/2 c. walnut meats (optional)

1 package butterscotch chips

Preheat oven to 375°.  Combine flour and baking soda in small bowl;  set aside.  Cream shortening and sugar together.  Add beaten eggs, mix well.  Now add hot water.  Next add flour mixture.  Chopped nuts go in next, if using, along with oatmeal, vanilla and butterscotch chips.  Drop by teaspoons on cookie sheet and bake for 10-12 minutes.

fun and games…

Buster and I have a few game systems that we like to play.  I think of all of them, I enjoy the Wii the best.  I would like to get the fitness package for it and try that out!!  Some one was telling me about the XBOX 360, I think it’s called??  I hear good things about the PS3, too.  We don’t have that.  We have PS2 and the original PlayStation, too, I think.  Anyway, I was wondering what everyone’s game system is and why…

losing weight…

Well, it’s official, I have lost about 6 pounds since we moved out to camp (we moved in the end of May)!!   And without using diet pills!!  The only change really has been my activity level.  I have been a lot more active out here.  I haven’t really changed a lot in my diet.  I have cut down my carbs some, but I could do more!!  I think I’ll be happier if I lose the weight slowly and in a healthy way than to do something crazy to lose a bunch and then gain it all back!!

job related illness…

I think it stinks that your job can actually kill you.  Did you know that some jobs can cause you to get Mesothelioma cancer??  People have worked with asbestos  for years and years only to find out (usually after they get sick) that it can critically  hurt them or even kill them.  Mesothelioma is specific to asbestos, but there are other illnesses caused by other things that can be fatal.  I think that as soon as a substance is found to be dangerous, they should alert people and find them another job!!  **climbs off her soap box**

AED…

I’ll give you three guesses to figure out what AED stands for……give up yet??  It stands for Automated External Defibrillator.  The website I linked you to sells them for professional use and personal use.  You can get the latest, most sophisticated models from them and they will run you just over a thousand dollars.   I don’t know about you, but I’m thinking I’ll leave the heart shocking treatment up to the professionals!!
