Today’s recipe is for Bran Muffins….before you click to something else, let me tell you, these are awesome!!!!  The recipe makes a ton of muffins and the mix will stay good in the fridge for up to six weeks!!  So, you don’t have to bake them all at once, if you don’t need them!!

 

Six Week Muffin Mix

What you will need:

1 (15 oz) box Raisin Bran

3 c. sugar

5 c. flour

5 t. baking soda

1 t. salt

1 qt. buttermilk

1 c. oil

 

Directions:

Mix well and refrigerate overnight.  Put muffin mix into muffin pans making as many as you would like.  Bake at 400° for 15-20 minutes.  Store remaining muffin mix in the refrigerator, tightly sealed for up to six weeks.

  3. Seriously? That’s all there is to it and it keeps in the fridge? Oh my goodness! I can’t wait to try this. Breakfast is so boring at our house.
