insurance….shcminsurance…

Buster and I have been without employee-provided insurance for a few years now.  That is one of those things you don’t miss until you don’t have it anymore…insurance I mean.  You take it for granted.  You have a problem, you go to the Dr.,  you don’t even think about it.


When you don’t have insurance, you try to guage how sick you really are.  Like, do I really need to see the Dr. for this or can I self medicate, or worse yet, see if it will go away on it’s own.  It’s a terrible feeling.  And private insurance (the kind you buy yourself through a company) is so expensive.  I recently got some insurance quotes and they were astronomical compared to our income!!


Here’s to hoping none of us get the swine flu, or anything else for that matter!!

lack of posts…

sry about the lack of posts lately, i have been overwhelmed with all the stuff that needs to be done in order for us to move.  we are moving out to camp slowly over the next few weeks starting next week. so much to do and i’m far too lazy to do it! ;)   also, i have been having problems with the site that i’m not too sure about, so to all 3 people who read this, i’ll be back full swing, be patient!! :) thanks !!

Menu Planning Monday…

Laura hosts Menu Monday for us every Monday.  This isn’t a new thing for me, I was making  my menu’s for a month in advance, but now I do it weekly.  Sometimes we get busy and I end up making, something else, so if you see something on here from last week, chances are I didn’t make it when I thought I would. OR I did, and my family wants it again!!


Monday~pizza and salad


Tuesday~Salmon Patties, potatoes, veggie


Wednesday~Stroganoff, rolls, veggie


Thursday~will be out at camp…could be anything :)


Friday~will be out at camp…could be anything :)


Commercials…

Oh how I detest commercials!!  Everything from tampons to toothpaste.  I cant’ believe what they will advertise on TV,these days.  Just in the last few days I have seen advertisements for hemorrhoid cream, Playtex tampons, Tylenol, aspirin and how it can save you if you take it while having a heart-attack, Mesothelioma treatment and lawyers who can sue the pants off the company that you worked for that made you sick with it, Florida Orange Juice  (not from concentrate!!)…and many more that I can’t think of right now.


They always put the commercials at a really suspenseful part of the show, too.  Like when your going to find out “who done it”… lol  Sorry, just in a ranting kind of mood today…

Mobile phone vs. Bible


Ever wonder what would happen if we treated our Bible like we treat our cell phone?


What if we carried it around in our purses or pockets?


What if we flipped through it several time a day?


What if we turned back to go get it if we forgot it?


What if we used it to receive messages from the text?


What if we treated it like we couldn’t live without it?


What if we gave it to
kids as gifts?

What if we used it when we traveled?


What if we used it in case of emergency?


This is something to make you go….hmm… where is my Bible?


Oh, and one more thing.  Unlike our cell phone, we don’t have to worry about our Bible being disconnected because Jesus already paid the bill.  And – there are no monthly or roaming charges.


Makes one stop and think where my priorities are? And no dropped calls!

Heaven is a wonderful place!

Take God at his word and claim His promise for your salvation.  Bow you head right now and sincerely ask Jesus Christ to forgive your sins and to save your soul.  Saying a prayer does not save you!!  You must believe what the Bible says and mean it in your heart to be saved!!!

ROMANS 10:9-11 That if thou shalt confess with thy mouth the Lord Jesus, and shalt believe in thine heart that God hath raised him from the dead, thou shalt be saved.  For with the heart man believeth unto righteousness; and with the mouth confession is made unto salvation.  For the scripture sayeth, Whosoever believeth on Him shall not be ashamed.

Once you are eternally saved, you are always eternally saved…

HEBREWS 13:5B…for he hath said, I will never leave thee, nor forsake thee.

Tempt My Cheese Luvin’ Tummy !!!

**REPOST** This is a revamped version of Live.Love.Eat’s Baked Crescent Almond Chicken. We took out the green pepper (we not likey so much) and added onion. We also did not use the almonds, we used CHEESE!!! Cause we are big cheese lovers in this house!!! We did tweak the amounts a bit to suit our tastes. We also used cream of mushroom soup per the advice at the end of the post on Live.Love.Eat. So here is the “new” recipe. You can see my helper in the picture!!


Cheesy Crescent Chicken


2 1/2 c. shredded Rotisserie Chicken

1/2 package of frozen spinach, thawed and drained

1 medium onion, diced

2 c. shredded sharp cheddar cheese, plus 1/2 c. to go on top just before baking

2-4 cloves minced garlic (you likey garlic, you add more)

3/4 c. cream of chicken OR cream of mushroom soup (undiluted)

1/2 t. salt

2 packages crescent rolls


**Put cooled chicken pieces into a large bowl. Add spinach , onion, cheese, garlic, soup and salt. Mix well. Place crescent rolls on GREASED cookie sheet, leaving triangles of dough attached to each other. Pinch seams of dough together to make one large rectangle of dough. Place chicken mixture down the center of the rectangle of dough, leaving a margin of dough on either side of mixture. Cut with a knife from the chicken mixture out to the edge of the rectangle on either side, making strips that are still attached to the dough underneath the chicken mixture.


**Fold up ends of dough up onto the chicken mixture. Then , overlap the strips over the entire length of chicken mixture for a criss-cross effect. Sprinkle with cheese. Bake at 375 degrees for 25 minutes. Let rest 5-10 minutes before cutting to serve.


Vacation spots….

Yeah, it’s cool to go on vacation.  Book a flight or drive to your destination.  Book a motel.  See the sites.


I would love to go with the hubby and visit distant places.  We have always stayed in motels whenever we have went somewhere.  We’ve never went on a “real vacation”, but we have done weekend jaunts or trips with our Church.  We have never rented a condo or anything like that.  But wouldn’t it be nice??  I was looking at Outer Banks vacation rentals and in some cases, you can rent a whole house for the same or less per night than you would spend on just a room at a motel!  Some are just feet away from the beach!  Now that’s what I call a vacation!

For the love of all that is good….

I am sick to death of my bad skin!! I keep getting these little “break outs” on my cheeks.  It’s  not  acne, but I’m not sure what it is.   It’s almost like hives, but it’s very dry and almost scaly…..gross I know.  I’d like to find some good, but not too expensive skin care products that help, but not sure where to start.   Right now I use AVON ANEW Retroactive Cleanser and Oil of Olay anti-aging moisturizer.  I also use an eye serum for AVON.  Anyone have any good ideas on something else I could try??

This is a picture of my son 2 weeks before he went to heaven.  We are so very thankful that he knew Christ as his personal Savior BEFORE he died.  Because of that, we will see him again some day and never have to be separated again!

Someone requested more information about the Rice Casserole I have on my menu for this week, so here you go…


RICE CASSEROLE (this is a family fave, but I don’t really follow a recipe, so it’s hard to put one down, adjust to your liking)


What you will need:


2-3 lbs lean ground beef

1 large onion

whatever you season your beef with when cooking

4-6 cups of cooked rice

4-6 cans stewed tomatoes, do not drain

1- 1 1/2 blocks Velveeta cheese


What to do:


Cook your beef and onion together til meat is browned and onions are translucent and tender.


Cook rice according to package directions.  I use minute rice, but any kind of rice can be used, must be cooked before adding.


Open your cans of stewed tomatoes (only open 3-4 to begin with and open more as needed).


Simply layer your ingredients in a oven safe pot, dutch oven or tall baking dish.  You will want at least three layers to have it taste right, more if your pan is tall enough!!   Start with rice, then meat, then tomatoes and top with cheese.   Continue until ingredients are all used!


That’s it, then you bake at 350° for 30-45 minutes to heat everything through and melt your cheese!!  The cheese will be a little  browned and bubbly when ready!!
